Can you fill profiteroles in advance?

The shell of a profiterole can either be made in advance or frozen.

How do you store filled profiteroles?For up to 2 days, cream puffs can be stored in an airtight container.Cream puffs can be crisped in the oven if they have softened in storage.If you want to re-crisp, bake in a 300F for about 5 to 8 minutes.Cool before filling.

The problem with profiteroles is that they go soft very quickly.Traditionally, the buns are made a day or two in advance, then allowed to dry out, but I'd suggest drying them out overnight in a low oven.

The choux dough can be refrigerated for up to 3 days or frozen for 3 months before baking.
