Do I need to chill a cake with cream cheese frosting before baking it?

You usually keep cream cheese in the fridge, but cake on the counter. What's going on?A baker clears up the confusion.

I asked this question at 11 p.m. last night.Since most people don't eat cake for breakfast, I decided to give everyone a piece of cake and let them eat it at 8 a.m.

I used to make this frosting and always served it the same day, but I wasn't sure what to do.Cream cheese is kept in the fridge, but cake is usually kept on the counter.

I put it in the fridge to be safe.Jan Moon used to work in the Cooking Light Test Kitchen and I reached out to her this morning. She runs the Dreamcakes bakery.I thought she would know what to do since she wrote an entire book on cupcakes for Southern Living.

Jan says it is fine to sit on the counter if you are going to eat the cake in the next day or two.If you make the cake the day before you plan to share it, you can frost it.Jan says that the icing helps keep your cake moist.

If your kitchen is like a Florida swamp on an August day, or if you plan to eat the cake over the course of a week, you should keep it in the fridge.

If you want to share a piece of cake with your friends the next day, you should put wax paper over it.Jan says to place a piece of wax paper in half so it touches the cake.Extra calories and fat can be added by frost over the area.
