How long does it take to cure poly on the kitchen table?

My first project was a kitchen table.I used stain and 3 coats of fast drying polyurethane.I don't know how long I will be able to use the table.The maker of the polyurethane said it will be cured in 7 days.Poly cure times were up to 21 days.I'm not sure if they were talking about the type of poly I used.Does anyone have experience with fast drying poly on a dining table?I want it to be washable before I use it.Thanks!

It depends on the temperature and humidity of the piece.The warm environment cures faster than the humid one.

Cured enough to use for a few days.If you leave things sitting on the finish, they may stick to it over time.There are newspapers, cans, books.

Thank you so much!That helps me a lot.It is warm in the south but humid.I keep a container in the center with salt andpepper, but I don't use placemats.I will keep it off the table until it is cured.
