Chitlins were never made by my mother.I am not sure if it was because she didn't know how or if she was just tired of eating them.The easiest way to feed a large family was with chitlins and other soul food.

I loved them the first time I tasted them.I just couldn't get enough of them, they were prepared by my uncle's wife.I would start cooking them on my own.

If you want to know how to cook for Thanksgiving, Christmas, or New Years, then read on.Chitlins and chitterlings are great any time of the year.

What you have heard is true.Chitlins stink.It was bad.They will stink in the whole house.You have won the battle if you can make it past the smell.The final dish is worth it.It's a reward for putting up with the smell.You get used to the smell once you prepare them a few times.

Decide how much you want to make.They absorb water and shrink as they cook so whether you buy from the butcher, get the big red bucket of them, or buy the ones in the plastic package, you will end up with a little over half of the amount you started with.

Many people buy the red bucket of chitterlings.The cheapest and smelliest are what they are.You will need to clean them because they haven't been pre- cleaned.You don't have to clean the pre- cleaned chitlins in the bag, but they still smell bad.The ones in the bag are more expensive than what you would pay for a bucket.If you have to make a lot of dishes for Thanksgiving or Christmas, this can be worth it.

If you have sensitive hands, I don't recommend getting the ones in the bucket as they will irritate them.Even though gloves make it more difficult to get the job done, I still recommend wearing gloves.

Chitterlings are pig intestines.The intestines carry feces.You want to make sure to clean them thoroughly, but you also have to be careful not to spread any diseases such as E coli orSalmonella.These things can be found in chitlins.

I have included a video that will show you what you need to do.About ten minutes is how long it is.If you watch the entire video, you will get a better idea of southern cooking and family traditions, even if you are not in the South.

You should rinse them at least 3 or 4 times before you cook them.There are no set rules when it comes to soul food.There are a few things that are pretty much the norm for everyone.

Real soul food is not about measuring spoons and such, you have to cook by sight.About 10 pounds of chitlins is what this is for.

Yes, Ruby!You can cook them in a pressure cooker.Normally you boil them for 3 hours, so I would do anywhere from 1 hour to 1.5 hours in a pressure cooker.You can always add more time if you need to.Let me know how they turned out.That's right.

The hub lady is very useful.The elders who used to prepare this have moved on.We didn't have them in my family when I was growing up in Jersey, but once married and exposed to them, I enjoy them between Christmas and the New Year.I cheated a bit but it worked.Parks was cleaned and seasoned.I put them in the microwave because the family threw a fit.I took my crock pot with me to the screened porch.They put the chittlins in the pot.Returned to the kitchen with onions, green pepper, vinegar, hot sauce and garlic.Allow them to cook on high for six hours after adding this to the pot.My friends loved them but my family did not.My 88 year old is the best.

I have not forgotten the first time I was in a home where they were making food.Whew!Are you going to eat that?The finished product they brought me was pretty good.It seems like a good idea to cook outdoors until the smell goes away.

I have never eaten chitlins.I was lucky enough to be around when they were cooking.They stink!We had a lot of "soul" food when I was a kid.I like Collard greens and corn bread the most.I can't do chitlins.

If they are smelling while you cook, that's one thing I know.They are not clean.You don't use a potato or viniger to clean them.
