How To Cook Escarole and Bean Soup

Cannellini beans and escarole are used in the soup.Adding extras such as pancetta, tomatoes, and onion will make it even more delicious.You can see how to make a few different variations of this soup.Both are easy to make.

Step 1: Take the garlic and cook it.

The olive oil should be put into a saucepan.Wait for the oil to get hot and turn the stove on to medium heat.Put the garlic cloves in the pan for 15 seconds.

Step 2: The escarole can be added.

Continue to cook it.It will take about 2 minutes.

Step 3: After seasoning it with salt, add the chicken soup, beans, and cheese.

The more salt you add, the saltier the soup will be.

Step 4: For about 5 minutes, you can cook the soup.

Put the soup in a pot and bring it to a boil.The soup should be reduced to low as soon as it starts to boil.Let the soup cook for 5 minutes in the saucepan with a lid.When the beans are heated, it's ready.

Step 5: If necessary, season the soup further.

If you need more salt and pepper, add it to the soup.Allowing guests to season the soup further would be another option.

Step 6: The soup should be served with extra-virgin olive oil.

Put the soup into bowls.Sprinkle some extra-virgin olive oil over the bowls.The soup should be served while it is hot.With a piece of bread on the side, this soup tastes great.

Step 7: Take five minutes to cook the pancetta.

Put the olive oil into the saucepan.The oil should get hot if the heat is turned up to medium.Add the pancetta to the pot by cutting it into 14-inch cubes.Put it in a pan for 5 minutes.Prosciutto can be used if you can't find any pancetta.

Step 8: The pancetta should be left aside.

The pancetta needs to be removed from the saucepan.Place the pancetta on a plate.Put the oil in the saucepan.

Step 9: Put the onion in the pan.

Put the onion in the saucepan.It will turn golden in color when you cook it.It will take about 10 minutes.

Step 10: The garlic, Rosemary, and red pepper are in there.

Continue for 3 minutes.You can use thyme if you can't find Rosemary.

Step 11: The escarole can be added.

Continue cooking for 2 minutes.The wooden spoon or rubber spatula can be used to stir the mixture.

Bring the mixture to a boil, then give it a good stir.If you use vine-ripened tomatoes, it's best.If you can't find any, use chopped canned plum tomatoes; be sure to drain them first.

Step 14: Put the pancetta in.

When the soup is done heating, take it off the stove.Cook the pancetta.If you need to add more salt and pepper, give the soup a taste.

Step 15: The soup can be served.

The soup is ladled into the bowls.You can top each soup with extra-virgin olive oil.You can add a sprinkle of the cheese.If you want, serve some bread on the side.
