The best way to store green chillies is to freeze them.You can either freeze them whole or make a paste from them.Either way, de-stem the green chillies, wash them, and then dry them completely.Don't use bruised chillies for freezing.Those should be used as soon as possible.

Some prefer to only freeze green chillies whole, while others want to make a paste of all of them.I like to have both with me.I can use the whole chillies and green chili paste as needed.

On a daily basis, I need the Chilli paste more often than I freeze it.I usually make a bigger amount of that.It's easy to do, because you just need to make a paste, mix in salt, and freeze.

The green chillies can either be put in the fridge or on the counter top.Don't thaw whole green chillies in the fridge, just take out as many as you need to use, and run it under cold water, or thaw it on the counter top for a few minutes.

It is possible to thaw the green Chilli paste in the fridge.You can thaw the chilli paste chunks on the counter top, but they can take 15-20 minutes to thaw, so take them.

I didn't think about freezing green chilies.We make and store ginger garlic paste at home, but never green chilies.It helps in places where green chilies are hard to find.
