Is streak of lean pork belly different from salt pork?

There is a very old recipe for Streak o' Lean.Nobody really eats this way every day.

I've debated about posting this recipe for a long time.A long time.Almost nobody is going to know what it is.Those people are not going to be very common.

Old-time southern food has a bad reputation.I don't need to add fuel to the fire with old recipes that reinforce the stereotype.I still wanted to do it.Here it is.There is a streak o' lean.

The opposite of bacon is Streak o' Lean.When bacon is smoked and has a streak of fat among the lean meat, streak o' lean is salt cured.That's right, streak o' lean is salt pork.It has been coating it in flour and deep frying.

Wait a minute, before you send the food police to my house and start proceedings to take my license away.As crazy as the food world is about bacon, if I had said I was deep frying it some of you would be in a frenzy.You know you would.

This isn't something to be eaten every day of the week.I haven't cooked Streak o' Lean in 25 years.

It's one of those once or twice in a lifetime recipes that can be found on restaurant buffet lines in rural areas of the South.You'll never forget it once you've had it.You'll want it.You will look for it at every buffet and make an excuse to have a bite.

How do you cook Streak o' Lean?You start with some pork.The same thing is used to season a pot of greens or baked beans.You can buy it in pieces or slices.Get the sliced for this recipe.

You need to soak the pork.You don't want to skip this step because it draws out a lot of salt.Some restaurants don't soak it, just fry it up, but I prefer to draw out some of the salt first.

I had buttermilk on hand and used it.Any kind of milk is fine.Some people will boil the salt pork for about ten minutes, drain it and then cook it.It works if you're short on time.

Remove the salt pork from the milk.The milk should be discarded.Sprinkle the salt pork liberally with ground pepper on the baking sheet.

In a heavy skillet, cook about a 14 inch of peanut oil.Carefully lower the pieces of salt pork into the pan when the oil is hot.Cook, turning once, and cooking through.

After frying the streak o lean, I would pour the excess oil off and make a cream gravy with flour and milk to go over biscuits with the drippings left in the skillet.There was a lot of pepper in the pan.Good eating, but only for once in a while.Thank you for reminding me.!
