Montreal steak spice is derived from the spice mix used to cure smoked meat at Schwartz’s deli on St-Laurent Blvd in Montreal – which was an adaptation of recipes brought by Romanian jews.It was adapted as a steak spice, instead of just a rub to use to flavour smoked brisket, by one of the cooks at Schwartz’s in the 1940s.Montreal is the home to one of North America’s largest and most culturally significant jewish communities, and Montreal deli culture is similar to – but distinct from – New York deli culture.

The Schwartz’s cook originally applied it to liver to make it taste better when fried – but before long became a standard on the steaks they serve, both there and at other delis around town.Just as New York deli fare has spread throughout the US, Montreal fare became the rage in Canada (and beyond) and it spread from there.
