While the original plan was for a 10-episode season, the Covid-19 pandemic meant the final episode was not completed in time, and moved into the confirmed second season, which will also have nine episodes. With nine episodes in total, the finale episode of What If? will release on October 6, 2021.10 Aug 2021

That lost episode is reportedly set in a universe where Tony Stark never makes it back through the portal at the end of The Avengers. episode we didn't get in Season 1. The good news is fans will eventually see this missing episode, but it's been bumped to Season 2.7 Oct 2021
